花巴新酒第1弾は、速醸仕込みのうすにごり酒です。
乳酸は入れるものの酵母は無添加の速醸で醸されたお酒でサーマルタンクを用いて温度制御をする事で個性を伝えながらも共感を得られやすい味わいのお酒を目指して造られています。
速醸で醸すお酒は、山廃や水酛と異なり乳酸菌による乳酸発酵を促さないため、酸と旨味をストレートに味わえ、また、酵母本来の酸や香りの影響がよく表れるそうです。

何種類ものフルーツキャンディをイメージさせる複雑な香りや穀物感が印象的ですが、素直な酸はしっかり花巴。
香りからは一瞬「甘いのかな？」と思わせられますが、実際に飲んでみると苦味やドライさがやってきて、スマートに切れてくれます。
新酒らしい荒々しさも感じられますが、薄いおりが柔らかさを演出してくれることで、バランスの良い飲み口に仕上がっていると思います。
開栓後、翌日以降の変化も愉しめます。
温度帯としては、キンキンに冷やすよりはやや常温に寄ってきたくらいでも良いかも知れません。

【Product Description】
The first release of Hanatomoe's new sake for this season is a Usu-Nigori (lightly cloudy) sake, brewed using the Sokujo method.

While lactic acid is added, no additional yeast is used. The sake is crafted with temperature control using a thermal tank, aiming for a flavor that balances unique character with broad appeal. Unlike Yamahai or Mizumoto methods, Sokujo does not promote lactic acid fermentation by bacteria, resulting in sake where the acidity and umami are more direct, and the yeast's natural acids and aromas are more pronounced.

The aroma is reminiscent of an assortment of fruit candies and grains, yet it remains unmistakably Hanatomoe with its straightforward acidity. At first, the scent might suggest sweetness, but upon tasting, you'll encounter bitterness and dryness that lead to a clean, crisp finish.

This sake retains the raw vibrancy of a freshly brewed sake, but the light sediment softens the edges, achieving a well-balanced drinking experience. It also evolves beautifully after opening, so try it on the following days for a new perspective.

For serving, slightly closer to room temperature than ice-cold might enhance its qualities.
